Ingredients
2 canned chipotle chiles in adobo sauce
2 tbsp. fresh lime juice
1/4 tsp. Ground Black Pepper
1/4 cup(s) yellow onion, diced
1 (32 oz) pkg Brookshire's Queso Easy, cubed
1 tbsp. Fresh cilantro, chopped
1 tbsp. Olive Oil
1/4 tsp. Ground Cumin
2 jalapenos, seeded and diced
1 clove(s) Garlic
1/2 tsp. Kosher Salt
2 tbsp. Unsalted Butter
1 (14 oz) can diced tomatoes
Directions
- Place chipotle chiles, cilantro, garlic, lime juice, olive oil, salt, pepper and cumin in food chopper. Puree until smooth.
- In medium saucepan, warm the butter with chipotle mixture over medium-low heat. Add onion and jalapenos. Cook until softened (about 5 minutes), stirring occasionally. Add diced tomatoes; begin adding cubes of Queso Easy, a few at a time. Stir until melted before adding more.
- Repeat process until all cheese is incorporated. Cook over low heat until thick and creamy.
- Transfer queso to serving bowl, small slow cooker or chafing dish over a flame. Serve with tortilla chips.
